Lecithin is used as an emulsifying and stabilizing agent in the food, pharmaceutical, and cosmetic industries. Lecithin is taken as a medicine and is also used in the manufacturing of medicines. Soybean lecithin is useful for its application in liquid ram semen. Lecithin from Soy, Refined, is a natural mixture of phospholipids consisting of phosphatidyl choline, phosphatidyl ethanolamine, and phosphatidyl inositol. In soybean lecithin the predominant fatty acid is polyunsaturated linoleic acid, amounting to about 70% of the fatty acids present.
Lecithin is used for preparation of vesicle suspensions commonly called liposomes or as monolayers.
A major structural phospholipid in brain, comprising approx. 15% of total lipid; primarily localized to gray matter.
